My method for brewing drip coffee Part 2

There are two main extraction methods that affect the taste of coffee .

1. Steaming
First of all, the essential step in drip brewing is "steaming."

"Steaming" is the process of expanding the coffee grounds before brewing the coffee.

Why is steaming necessary?
This helps extract the delicious compounds found in coffee .

The reason why coffee powder expands when hot water is poured over it is because of the carbon dioxide (CO2) contained in the coffee beans .

Roasted coffee beans contain a lot of carbon dioxide, so when hot water is poured into them, many bubbles are produced, causing the grounds to expand vigorously.

This carbon dioxide prevents the coffee powder from coming into contact with the hot water, preventing the coffee ingredients from dissolving into the hot water. As a result, coffee made with insufficient "steaming" will have a bland taste.

By thoroughly "steaming" the coffee, you can remove carbon dioxide, which interferes with the extraction of delicious ingredients, and brew coffee that is rich in delicious ingredients.

By the way, the inside of the coffee dripper has wavy grooves to allow carbon dioxide to escape efficiently.

2. How to pour hot water

Earlier, I mentioned that the reason steaming is necessary is to extract the delicious ingredients.

While it is important to carefully brew the coffee using drip, it is even more important to "extract the coffee in a balanced manner."

To brew delicious coffee, it is important to extract a balanced amount of ingredients from the coffee powder placed in the dripper.

When brewing drip coffee, it is common to pour too much hot water over some of the coffee in the pot, resulting in uneven extraction.

You need to be careful about how you pour the water.


So, to pour hot water evenly,
Let's understand how the dripper used for paper drip works.

Because of the shape of the dripper, the amount of coffee powder varies between the center and the periphery.

Therefore, pour hot water into the center where there is more powder to increase the contact between the hot water and the powder, and do not pour hot water directly into the peripheral areas where there is less powder, but rather allow them to come into contact with the hot water poured in the center, so that the contact time between the hot water and the powder is the same overall.

The reason why you should not pour hot water directly onto the filter paper is that if you do, you will not be able to extract much of the coffee components.

However, if you continue to pour hot water into the same spot, the powder in that area will be over-extracted.

The commonly-recommended way to pour water for drip coffee is to pour it in a "no" shape, which is said to be to avoid pouring too much water in the same place.

So, as long as you understand that, there's no need to be particularly particular about the character "no."
