-Selection of coffee cherries: Raw materials are sourced from farmers in the Argentina region who grow Caturra and Bourbon subvariety coffees. The cherries are separated by gravity using a floater, and only fully ripe cherries are selected.
- The fermentation process combines aerobic and anaerobic processes to create a clean and unique flavor.
- Slow drying After fermenting the cherries, they are slowly dried in the sun and on African beds (shade) for 60 days.
After drying, the rice is stored in a warehouse for over 20 days and then threshed. It is then hand-sorted to remove any defects such as uneven drying, resulting in a clean cup.
